What I hate about IT is that you have to wear multiple hats. Not unique to IT in the slightest, but IT often has to do weird shit that IMO should not be at all in the job description. Management for some reason is convinced IT should be ok with doing physical labor to move shit around, should be ok to be part time logistics department, should be part time project manager, should be part time janitor, should be like HR, should be sales people, should be public speaker, should be part time QA, should be part time in legal, etc etc etc. It's fucking ridiculous.
I just want to work with the tech. Get the people out of the fucking way. All I want is the tech ffs. It's in my fucking title.
IT is a giant umbrella. Many of those things you listed are absolutely part of “IT”.

No, it’s not. QA is IT. Software dev is IT. BA is IT. Networking is IT. Sales can be IT.
No brother, it's not. They scammed you into believing you should be a SME in unrelated things that legit have nothing to do with IT. Stop letting them exploit you.
You don’t seem to understand the difference between a field of work (IT) and a specific role (software engineer, QA, BA, etc).
I’m not being exploited, if anything I’m holding my employer for ransom because of my knowledge of every part of our pipeline.

By your attitude I just know you’re in a dead end job with next to zero responsibility. I actually like learning and expanding my skills. I jump at the chance to learn other parts of my field, especially when I’m getting paid to do it.
If you’re in IT and you’re not constantly learning and adding new skills, you’re being left behind.
Whatever helps you sleep at night brother. I'll be here for you when the CEO lays off your department for mysterious reasons. lmao
